Рукола «Оліветта» - скоростиглий сорт. Період від сходів до збирання листя 20-25 днів. Листя тонке, довгасте, з горіхово-гірчичним смаком. Вирощується у відкритому ґрунті, під плівковими укриттями та на підвіконнях у контейнерах.
Зелень видаляють до початку цвітіння. При регулярному поливанні листя стає ніжнішим і менше гірчить. Молоде листя використовується в салатах і як гострий гарнір до м'ясних та рибних страв.
